Raspberry Salsa Walleye
Raspberry Salsa
¾ cup fresh raspberry (consider pineapple as a substitute)
2 Tablespoons finely chopped red bell pepper
2 Tablespoons chopped fresh cilantro
2 teaspoon minced ginger
1 teaspoon minced jalapeño pepper
Walleye
4 walleye fillets
1 Tablespoon olive oil
¼ teaspoon minced garlic
¼ teaspoon salt
1. Combine raspberries, bell pepper,
cilantro, oil ginger and jalapeño pepper in small bowl; mix
well. Cover and refrigerate.
2. Brush walleye with oil, garlic and sprinkle with salt.
3. Grill walleye, on uncovered grill, over medium-hot coals
for 8 to ten minutes or until walleye flakes easily. Turn
once.
4. Top walleye with salsa and serve.
