Angel Hair Pasta Mold

12 ounces lite tofu, drained and pureed
4 cloves garlic
1 cup Parmesan cheese
¼ cup chopped fresh basil leaves
2 tablespoons olive oil
1 pound angel hair pasta
¼ cup bread crumbs

  1. In a food processor, puree tofu, garlic, ½ cup of cheese, basil, olive oil and salt to a smooth paste.

  2. In a large pot, bring salted water to boil. Add the pasta and cook until al-dente.

  3. Drain the pasta. Add pasta while it is hot to the tofu paste and mix well until all pasta is coated with the tofu paste.

  4. Mix the rest of the cheese with the bread crumbs.

  5. Spray a cake pan with olive oil spray.

  6. Coat the pan with half of the cheese and bread crumbs mixture.

  7. Stuff the cake pan with the pasta.

  8. Press the pasta very firmly in the cake pan.

  9. Sprinkle the top with the rest of the cheese and crumb mixture.

  10. Bake in a 375 degree oven for 35 minutes. 

  11. Serve with mixed salad.
